Green Chile-Chicken Stew Recipe

All the big flavors from a south-of-the-border Posole are found in this freezer-friendly stew. Ideal for feeding a crowd during a gameday party, serving the family for a weeknight meal, or enjoying the leftovers for lunch, this recipe deserves a spot in your list of favorite cool-weather soups and stews. Get maximum taste by using bone-in chicken thighs. To freeze, let the stew cool, then pour into large freezer bags, seal, and flatten so you can stack them into your freezer. Or freeze small servings of stew for quick and satisfying lunches. Ladle the cooled stew into the cavities of a jumbo muffin pan and freeze. Once frozen, pop out of the muffin tins and store in a plastic freezer bag. Reheat individual portions in the microwave as needed and pair with warm bread or your favorite corn chips.

Broken Pasta with Pistachio and Lemon Recipe

Here we use a slightly unconventional method for cooking the pasta that takes a little longer than simply boiling it, but the results are well worth the extra time. First, it's broken into small pieces and toasted in a skillet to give it a rich, nutty flavor. Then, it's cooked by adding little bits of warm chicken stock at a time—risotto-style—until the pasta is fully tender and super creamy (without adding any cream.) When cooked for 6 minutes, the eggs have a jammy yolk that's just right for combining with the pasta to create an extra-rich sauce.

Yes! You can make chicken and rice in 20 minutes. When a craving for comfort food hits and you need it in a hurry, this fast take on chicken and rice hits the spot. Stirring chopped baby spinach into warm brown rice is a smart way to get more vegetables and jazz up an otherwise plain starchy side. Our pro tips for speedy cooking: Cut chicken into bite-size pieces so it cooks in just a few minutes, use precooked rice and heat it in the microwave, then use the hot rice to wilt the spinach for you while you finish the chicken. Fresh thyme, chopped basil, or parsley are all good stand-ins for the rosemary. Round out the meal with a glass of sauvignon blanc.

Poached Chicken Noodle Bowl

Poached Chicken Noodle Bowl Recipe

There's no better way to describe this poached chicken dish than wellness in a bowl. The delicate and delicious noodle bowl is a shining example of how to make and use poached chicken like a pro. Gently poaching chicken breasts in a liquid thats lightly flavored with aromatics, such as ginger and lemongrass, leads to wonderfully succulent, tender meat with a lovely level of flavoring. In this wholesome dish, we also use the poaching liquid both to cook the noodles and create the light coconut broth. The key to successful poaching is temperature control; once you've added your chicken to the pot, you want to keep your poaching liquid from ever reaching a boil. In fact, you should aim to keep the water at a state of releasing wispy spouts of steam from the surface, but never bubbling, throughout the entirety of the cooking process. (It's not nearly as intense/difficult as it seems.) You should also try to purchase chicken breasts that are roughly the same size so that they cook at the same rate.

Mostly Mushroom Pasta

Mostly Mushroom Pasta Recipe

If you're a mushroom-lover, this is the pasta dish for you. It's chock-full of three kinds of fresh mushrooms (2 pounds of them) that contribute their own flavors and textures—meaty, hearty portobello; super savory, tender shiitake; and earthy, chewy cremini. We cook them in stages so the tougher mushrooms cook longer and the more delicate shiitakes cook less so they hold their shape. The touch of crème fraîche in the sauce gives the dish a stroganoff-like flavor; substitute full-fat sour cream if you can't find it.

Coriander Chicken and Rice

Coriander Chicken and Rice Recipe

This dish is inspired by the savory street cart chicken and rice whose fragrance will lure you over from a block away. Though you can enjoy this lunch at room temperature, it tastes best reheated. Rest assured, the food holds up beautifully. Because everything is so nicely seasoned, it's all just as flavorful after 3 days. When making the recipe, be sure to get the rice going first; as it cooks, the rest of the meal will come together.

Instant Pot Khao Soi Recipe

What gives this easy Khao Soi its incredible flavor backbone is the homemade curry paste. It's easier to whip up in the food processor than you might think and we'd strongly recommend giving it a try. However, if you find yourself pinched for time, you can substitute 3-4 tablespoons of store-bought curry paste. Lemongrass is easily sourced at specialty or Asian markets; however, if you have trouble finding it fresh, you can find a super convenient lemongrass paste in the produce section of many conventional grocery stores.

With one simple extra step, the standard mashed potato process leads to a creamy soup adorned with all the great baked potato toppings. This recipe uses half the oil than the classic without sacrificing any of the flavor. If you don't have a meat mallet or small heavy skillet, try using a wooden rolling pin, making sure all the chicken's pounded into an even thinness so it cooks evenly. Try serving the chicken with mashed potatoes, couscous, angel hair pasta, or roasted seasonal root vegetables for a meal that's easy enough for a weeknight dinner, but fancy enough to serve guests.

This recipe comes courtesy best-selling author Ann Hood, whose book of stories and recipes, Kitchen Yarns: Notes on Life, Love, and Food, is out soon. For convenience, Hood sometimes makes the meatballs ahead of time, freezes them, and thaws them before adding to the soup. She likes to make her own chicken stock for even richer flavor: She puts the picked carcass bones of a roast chicken (or a picked rotisserie chicken) in a Dutch oven, covers it with water, then adds three carrots before simmering.

Chicken Paella

Chicken Paella Recipe

A Spanish dish from the Valencia region, paella is named for the cooking vessel itself: a round, shallow pan made of carbon steel that heats quickly and evenly. A good paella pan helps develop the socarrat, or crispy layer of rice crust on the bottom that's the most prized part of the dish. A large skillet will work as well if you don't have a paella pan. Look for short-grain Bomba or Valencia rice at specialty markets. Be aware that risotto rice like Arborio won't work here, since paella rice isn't meant to be creamy.
